Harvest: Second week of August

This was last weeks harvest:
I froze the zucchini and half the cabbage and then made a cabbage recipe which I then found out that I can only eat cabbage 1 day, not a good left over food.

I made two jars of sweet and spicy pickles, as the sweet recipe worked better last year.

Last night I picked 1 eggplant, 5 tomatoes, and 7 or 8 small red peppers.

I used three tomatoes to try my hand at oven dried tomatoes, I cut them into small pieces that I roasted for about 3 hours at 200°, then might have needed more time. And they were really tasty so I don't know how long they will last due to a couple issues...

I ate one tomato in a Caprese salad-yum and the last one I ate half of this morning.

I fried the egg plant and the rest of the last zucchini I picked- thank you Christine (she sent me a picture of her fried zucchini...)

And hung up the small red peppers to dry.

Then I canned cherries that I bought in Michigan last weekend.  But that is another story.
